We all know I am in love with lazy summer afternoon tea cocktails and this week I wanted to bring you something refreshing, a little bit dirty but with a wholesome honey note.
Cocktails can be very simply put together and I hope that with minimal preparation, you could serve up something really special for your easy breezy summer’s afternoon.
I am clinging onto the very last scraps of summer here and these two refreshing drinks bring to me flavours of summer and thoughts of relaxed afternoons laying under trees in the sun with my favourite book and some good music.
The only preparation you need for these is to make the tea and honey syrup earlier in the day and store in the fridge.
So the first cocktail for this week is . . .
Earl Grey Cocktail
What you need
150ml cold Earl Grey tea
1 1/2 shots gin
1 1/2 shots honey syrup – simply 5 parts water, 1 part honey warmed through until almost simmering. Cool in fridge
2 shots lemon juice
2 sprigs of lavender
What you do
Place all ingredients into a cocktail shaker with ice
Shake well until the cocktail shaker gets a good frost
Strain into a short glass filled with ice
Garnish with a lavender flower
Dirty Lemon Iced Tea
What you need
100ml cold black tea of your choice. I used English Breakfast but play around with flavours
30ml honey – I used orange blossom for this recipe for the citrus notes
1 shot lemon juice
2 shots vodka. I used plain, but a lemon infused one would also work beautifully
Lemon for garnish
What you do
Brew the tea and while hot, mix in the honey. To make this into larger quantities for a pitcher, simply scale up the tea and honey at this point
Place in fridge until cold
Fill a tall glass with ice
Place all ingredients in the glass and stir gently
Garnish with a squeezed lemon slice
